Don't fight ginger trying to peel it with a knife, use a spoon instead!
Most of the time, when you're peeling ginger, the knife ends up taking off way more than you want. Using a spoon is the easiest and fastest way to do it without taking parts of the ginger itself.
With the edge of the spoon, just scrape off the surface of the ginger: the skin will start to come off almost by itself!
